Pumpkin Whoopie Pies.

These taste really great!

Cookies•1 1/2 cup solid pack pumpkin
•1/2 cup butter, softened
•1 cups white sugar
•1 egg
•1 tsp vanilla extract
•2 cups all-purpose flour
•1 tsp baking powder
•1 tsp baking soda
•1/2 tsp salt
•1 tsp ground cinnamon
Filling•1/2 cup butter
•1/2 cup shortening
•1 cups sugar
•1 Tbsp all-purpose flour
•1 tsp vanilla
•1/2 cup warm whole milk

1.Preheat oven to 350 degrees F.
2.Line baking sheets with parchment paper.
3.Cream the butter with the sugar. Beat in the pumpkin, egg, and vanilla.
4.Stir in the flour, baking soda, baking powder, salt, and cinnamon into the pumpkin mixture. Blend until combined.
5.Drop teaspoonfuls of dough onto the prepared baking sheets. Bake for 12 to 14 minutes.
6.While cookies cool completely, prepare filling.
7.Combine the filling ingredients and mix until smooth and creamy. This will take about 5 minutes.
8.Spread a glob of cream onto the flat side of a cookie and top with a similarly sized second cookie.
