Pumpkin Roll For Thanksgiving Dessert.

Impress your guests this Thanksgiving with a delicious pumpkin roll,and it is also easy to make.Everyone will love this dessert.
Line a 10×15 inch jelly roll pan with waxed paper,and grease.Pre-heat oven to 375 F.
In a large bowl beat 3 eggs,and 1 cup of sugar with a mixer on high speed for 5 minutes.Gradually mix in 2/3 cups of pumpkin.Combine 3/4 cups of flour,1 teaspoon baking soda,1 tsp of salt,and 1/2 tsp of cinnamon.Stir into the pumpkin mixture.
Spread the batter evenly into your pan.Bake for 15 minutes.
After you take it out of the oven sprinkle the top with powdered sugar,and flip it onto a clean dish towel.Remove the waxed paper,and sprinkle with more powdered sugar.Roll it up like a jelly roll in the dish towel.Put it in the fridge for 1 hour.
Then make the filling.Start with 8 ounces of cream cheese,2 tbls of margarine,1 tsp of vanilla,1 cup of powdered sugar,and 1/3 cup of nuts mix well together.
Remove the roll from the fridge and un-roll it,spread filling on the roll,and roll again with-out the towel.Place in a container,or plastic wrap.Put in the fridge it will keep up to 4 months in the freezer.Great dessert! Makes 16 servings so it is good for a crowd.
