I Forgot about Thanksgiving.


Somewhere between housework,shopping,cooking,and homeschooling 4 kid’s I forgot about Thanksgiving coming up.Thanks to someone at our homeschool group bringing up the subject of Thanksgiving we will be celebrating it after all.I never let on that I was totally surprised that it is in fact on Monday.Anyway I have put my recipes together,and have my grocery list ready.Guess what I will be doing this weekend,yes shopping.So I decided to share some of our families recipes with you.So get ready to cook your big feast.

Thanksgiving is important for families it is the perfect time to gather together,and spend some much needed time with each other.You can make this day even more memorable by making it fun,with some fun filled activities.Start some new family traditions this year.I’ll mention some ideas later.

Be prepared to impress your guests with the perfect Thanksgiving meal.We will start with the turkey which is definitely the star of this show.This is a delicious herb roasted turkey which will add a wondeful flavour to your meal.

In a bowl combine 1/4 cup of olive oil,4 cloves of garlic minced,1 tsp of salt,1/4 tsp of pepper mix together.Using your fingers loosen the skin on the turkey breast,then rub this mixture under the skin.Secure the skin back on with toothpicks.

Then cut 4 medium onions into wedges.Cut  5 celery ribs,5 carrots,and 3 parsnips into 2 inch lengths.Place a fifth of the onions,celery,carrots in the turkey cavity,add 8 sage leaves plus 4 fresh sage sprigs,and 6 fresh thyme sprigs inside the turkey as well.Place remaining vegetables in the roasting pan.

Bake at 325 degrees until meat thermometer reads 180.Baste often with pan drippings.Cover loosely with foil if turkey is browning to quickly.When done cover and wait 25 minutes before carving this seals in the juices.Drain the vegetables or discard them from the pan.Some people find them to greasy.Use the drippings from the turkey for your gravy.

Then you will need some side dishes to round out your meal.So will start with the fluffiest mashed potatoes you will ever taste.You will need to peel about 2 pounds of potatoes,melt a 1/2 a cup of butter,warm 1 cup of light cream.Place your potatoes in a pot,cover with cold water about 1 inch above your potatoes.Cover and bring to a boil over high heat.Reduce heat , and let simmer until the potatoes are tender.Drain water from the pot use a strainer.

Return potatoes back to the pot,and place over low heat.Shake potatoes over heat 2 minutes to dry them.Mash them with potato masher.Then stir in the butter with a spoon until well mixed.Add cream,1 tsp of salt ,and ground pepper to taste.Mix well.Serve right away.

This one is a definite favourite for the kid’s.Cheesy Broccoli Casserole.It’s easy to.If your kid’s are like mine omit the onions.You will need 2- 10 ounce bags of frozen brocoli cut,2 cups of chopped onion boiled in water until tender,2 tbls of margarine,and 2 tbls of flour,salt,and pepper to taste,1 cup of milk,1-3 ounce package of cream cheese,1/2 cup of your favourite cheese shredded,1 cup of soft bread crumbs tossed with two tbls of melted margarine.

Cook broccoli then drain.Put broccoli and onions drained in 1 1/2 quart casserole dish.

In a medium pan over low heat melt margarine,blend in flour, salt, pepper,and milk.Mix well.Heat over medium heat stirring constantly,until sauce thickens and bubbles.Reduce heat to low,and add cream cheese mix,stir until smooth.

Pour sauce over vegetable mix.Top with shredded cheese,and sprinkle bread crumbs on top.Bake at 350 F for 40 minutes.This will serve 6.

Now it would not be Thanksgiving without Cranberries.This one is new to me but I am going to try it.Wild Cranberry Sauce.You will need 4 cups of wild cranberries,3/4 cup of apple juice,2 ripe pears cored and sliced,1 cup of raisins,and 1 tsp of sugar.

Combine all your ingredients into a saucepan bring to a boil over medium heat.Reduce heat to low cover and simmer for 10 minutes.Stir occasionally.

Chill the sauce before serving.Will keep up to two weeks in the fridge covered.Makes 4 cups.

Now Pan Gravy Recipe.You will need 1 cup of white wine give yourself one to.One and half cup of chopped onions,3 cups plus 3 to 4 tbls of chicken,beef,or vegetable stock,2 tbls of cornstarch,and salt and pepper to taste. 

Spoon off all but 1-2 tbls of cooking fat if there non dark fatty juices in the skillet,or roasting pan leave them in there.Add wine,and onions turn heat to high.Stirring until most of the wine has evaporated,and the onion is soft about 5 minutes.

Add 3 cups of stock,continue cooking until it is reduced by half 5 to 10 minutes.Combine remaining stock with cornstarch and then heat to low.Stir cornstarch mixture into the liquid.Cook stirring about 5 minutes.Season to taste.

The next dish is creamed onions a real hit with the adults.You will need 3 pounds small white onions peeled,1 tsp of salt,1/4 cup of butter,5 tbls of flour,2 cups low fat milk,and a few drops of hot sauce.

Place onions into a saucepan,add 1/2 tsp of salt and just enough water to cover the onions.Bring to a boil,reduce heat to low, cover and cook 20 minutes.Drain and set aside.

Do your sauce in a medium sauce pan melt butter,blend in flour,and 1/2 tsp of salt.Add milk,cook stirring constantly until it thickens,and comes to a boil.Stir in the hot sauce.Drain onions and then add your sauce.You’ll love this there so good!

Almost forgot the most important dish.Savory potato stuffing.You will need 3 large baking potatoes,cut into 2 inch chunks,1 medium onion cut into 2 inch chunks,4 scallions cut into 1 inch pieces,1 tsp of garlic powder,1 tsp of salt,2 tbls of schmultz(chicken fat) or melted margarine.

Using a hand grater shred potatoes on larger holes.Transfer to a bowl.Chop onions,and scallions,then add them to the potatoes.Stir in the garlic powder,salt,pepper,and chicken fat.Then spoon your stuffing into your turkey.As soon as turkey is done put your stuffing in a bowl.Makes 5 cups.

You can also cook your stuffing on a greased baking dish and put into the oven an hour before everything is done.It’s actually safer to cook seperately.Time to unbutton the top of your jeans to make room for all this food huh!

Dessert,this is an easy alternative to pumpkin pie.It’s quick,and there is no baking.It makes 12-15 servings.You will need 2 1/4 cup of crushed butter flavoured crackers,1/2 a cup of sugar,3/4 cup of butter melted,2 cups cold milk,2 packages 3.4 ounce each of instant vanilla pudding,1 can 15 ounces of solid packed pumpkin,1 tsp of pie spice,1/2 tsp of ground spice islands ground saigon cinnamon,1/4 tsp of ground ginger,1/4 tsp ground nutmeg,whipped topping,and chopped pecans.

In a small bowl combine cracker crumbs,sugar,and butter.Press into a greased 13-inx 9 in dish and set aside.

In a large bowl,whisk the milk,and pudding mix for 2 minutes.Let sit about 2 minutes.Stir in pumpkin and spices.Spread over the cracker mix.Put in the fridge for 3 hours.Garnish with whipped topping,and nuts.

So that is my menu,I’m having an anxiety attack just thinking about it all.Is Mc Donald’s open on Thanksgiving?
